Pecan snowball cookies

These pecan snowball cookies are such a classic, in fact, I can almost say pretty much all of us have seen or eaten them at some point. In a party, event, or catering. They are cookies made with butter and pecan nuts in the shape of small balls with some confectioners sugar. When they are finished they look like small snowballs, which is where their name comes from.

They are so famous and good that pretty much everyone I know likes them. My mom loves them, because they are crunchy and have nuts, and she really likes nuts or any other crunchy foods.

These cookies are so easy to make. You make the dough, form small balls using your hands and bake them. Then, right out of the oven, you have to have a plate with sonfectioners sugar on it ready, to roll them on it to cover them completely. This, by the way, has to be done while the cookies are still hot, so the sugar sticks better to them.

Now, it is typical for them to have nuts and the most common is to use pecan nuts, which is traditional, but you can also use castile nuts, or not use any type of nut at all.

The beauty of this recipe is that these cookies are so easy to make and you could make a lot of them in no time, this is why they are great for big events or gatherings, that and because they are also cute. They are perfect for a dessert bar or table, you can make a tower with them and make the guests grab and eat as much as they want.

Another thing is that children love them because the flavor is simple and come in a fun presentation.

Pecan cookie balls

Ingredients
  

  • 1 C (7.90 oz) (225 gr) unsalted butter at room temperature
  • 3/4 C (3.25 oz) (92 gr) confectioners sugar
  • 1 tbsp (0.50 fl oz) (15 ml) vanilla extract
  • 2 1/4 C (10.30 oz) (292 gr) all purpouse flour sifted
  • 1/4 tsp 0.06 oz) (1.7 gr) salt
  • 1 C (4.24 oz) (120 gr) pecans chopped, not ground
  • 1/2 C (2.15 oz) (61 gr) confectioners sugar to decorate

Instructions
 

  • Line a rectangular baking sheet of about 15.8 x 11 inches (40 x 28 cm) with parchment paper.
  • In a big bowl, using a whisk cream together the butter, confectioners sugar (the 3/4 C)and vanilla for 2 minutes until the mixture turns lighter in color and fluffy.
  • Integrate the flour salt and nuts (prebviously sifted) little by little using a rubber spatula until you get a soft dough (careful not to overmix).
  • Cover the dough with kitchen plastic wrap and refrigerate for 30 minutes.
  • Preheat the oven to 375º F (180º C). Once you take the dough out of the refrigerator form small balls using your hands and place the, on the baking sheet. You will get about 30 balls.
  • Bake at 375º F (180º C) for 15 minutes or until they are slighty golden brown.
  • To decorate, place the rest of the confectioners sugar in a medium bowl, and when the cookies come out of the oven, roll them on the sugar until completely covered.
