
Applesauce, here in mexico is somewhat subestimated. To me it only meant baby food. It wasn´t until recently, when one of our brothers gave us Austrian pancakes with applesauce, that I said “WOW!” it was like a revelation. This is now my favorite topping. I use it for hot cakes, pancakes, waffles, etc. They give a light and fresh feeling to these.

Ingredients
- 6 apples different varieties, red, granny smith, golden, etc.
- 2 C water
- 3 tbsp granulated sugar
- 1 tbsp brown sugar
- 1 pinch salt
- 1 stick cinnamon
- The juice of half a lemon
Instructions
- On a chopping board, peel the apples and take the seeds out. Cut into small chunks and put aside.
- Place the apple chunks along with the rest ingredients (except the lemon) in a small pot to low heat and cover with a lid.
- Let it cook for 20 minutes. Once that time has passed, add in the lemon juice and cook for 5 more minutes until the apple turns soft.
- When the apples are ready, turn off the heat and let it cool down for 10 minutes.
- Take the cinnamon sticks out and pour the apple into a blender. Blend until you get a soft and somewhat thick mixture (add some more water if needed).
- Pour the mixture in a container and let it cool down completely. Then refrigerate until you need it.
