French toast

French toast is one of those recipes our mother always makes and used to make a lot when ew were little. That’s because we like it a lot and because it is easy to make. Now, this is not our mother’s recipe, it is ours, with some changes we feel are for the better.

I love breakfast! I don’t usually have the time, but whenever I can I make myself a yummy breakfast, it’s great and it always makes me feel better, and makes my day way easier feeling I took the time to make something just for me. 

Now, every morning I’m either in the mood  for a savory breakfast or a sweet one. When I crave a savory breakfast I’ll usually go for something with eggs (just because I love eggs), and I make myself scrambled eggs, or an avocado toast with a fried egg on top, or maybe eggs benedict, but when I crave something sweet I’ll be a bit more creative. 

But the thing is I live with my sister and a friend, and we share the apartment, and since I only cook for myself most of the time, it’s common no have leftovers, so what do I do when I have leftover bread, that´s now too stiff to eat just like that? well, you guessed it: french toast.  This is perfect, because there always seems to be some old bread here, so it is both a means to pamper myself and make sure Im not wasting any food. 

And yes, the stiffer the bread the better (to a certain point of course). Actually, soft bread wouldn’t work as well in this recipe. The best thing is to use day-old bread, so it is a bit stiff but not too much.

Now, about what type of bread to use, you could basically use any type you like. You can use the normal loaf bread or use a baguette, or any other type of loaf bread for that matter. I like slicing it into small pieces, because it looks better, but you can cut it the way you prefer for cooking it.

Ingredients
  

  • 1 egg
  • 1/4 C milk normal or vegetable
  • 1/2 tbsp vanilla
  • 1 tbsp brown sugar
  • 1 pinch salt
  • 1/2 tbsp butter
  • vegetable oil

Instructions
 

  • Preheat a pan on the stove over medium heat, and put the butter there for it to melt. 
  • In a small bowl, place the egg and beat using a fork or whisk. Then add in the milk, vanilla, sugar and salt. and whisk again.
  • Once the butter has melted, pour it over the egg mixture and mix again. Place the pan on the stove again and pour some oil. 
  • On a cutting board, cut the bread of your choice into slices about 1/2 inch (1cm) thick (the resulting shape will depend on the type of bread you use).
  • soak each piece of bread in the egg mixture making sure each one is perfectly coated, and then place each one on the pan to cook for about 3 min on each side. 
  • Take out of the pan and serve with some more brown sugar and maple syrup. 

Notes

*you could also add 1/2 tsp cinnamon to the egg mixture in this recipe and serve the french toast with some nuts or dried fruits as toppings.
