Oatmeal porridge

Oatmeal porridge is cooked oats with hot milk, a little sugar and spices to taste. We like adding some ground cinnamon, salt and a some natural vanilla extract, which tastes better than artificial vanilla extract.

Of course I had eaten oatmeal before, during my childhood, my mother would make it as a cream, not too liquid, but not too thuck. It is one of those things that both makes me nostalgic about being away from home, and brings me joy because it reminds me of my family.  

Thinking about oatmeal makes me think of the warm winters back home, and of the school mornings, when, rushed I would eat fast to get to classes on time. 

Oatmeal porridge is nothing but thick oatmeal, that´s what I call it, though now I usually call it breakfast oatmeal because that´s when I usually eat it. It has the consistency of a puree. I like to eat it plain, but the best is to eat it with some yogurt and fruit on top, I like red grapes or strawberries, and some maple syrup and yum! 

But if you want to, you can add whatever you want or like, I actually really like adding yogurt on top and mixing it a little when eating it. After this, you can add basically anything, chocolate spread, peanut butter, and specially nuts, pumpkin seeds, chia seeds, pecan nuts, hazelnuts, almonds, etc.

Ingredients
  

  • 1 C rolled oats
  • 2 1/2 C milk (dairy, soy or almond)
  • 3 tbsp brown sugar
  • 1/2 tsp salt
  • cinnamon to taste
  • 1 tsp vanilla

Instructions
 

  • In a pot, combine together all the ingredients and heat over medium heat, stirring non-stop, until the mixture thickens, for about 10 minutes. 
  • Serve hot or cold, with normal or soy yogurt, some fruit and honey or maple syrup.
