No more exams on the horizon, and the cravings of warmer weather now, I have a few days before I start being so busy, going to work half time in the mornings and then university in the afternoons, shich is both challenging and exciting. I have always enjoyed being busy, I thrive, and I actually work so much more and better while pressured, I love having a schedule to follow. But then again, this few days before it all begins again, having really nothing to do, but this, reading,excercising etc have been so heavinly. My body gets to wake up naturally, and I create a day where it´s only me and I have found I truly enjoy being alone. Mixed of coure with times in which I crave spending time with people, but I am quite certain I might be a bit less in need of socializing than most.

Now, these blondies are great, they´re part of a really long list of recipes I plan on making, and since I have had the time, I have been cooking quite a lot. And no, it is not my birthday, nor is it close. It just occured to me that I needed to have something in here birthday themed, something yummy and easy to make for when in a hurry, so here it is. The birthday blondies recipe.

  • 1/2 C (1 stick) butter melted
  • 1/2 C packed brown sugar
  • 1/4 C granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 C all purpouse flour sifted
  • 1/2 tsp baking powder
  • 1/3 C m&m´s
  1. Preheat the oven to 356°F (180°C) and prepare a square baking pan of about 9×9 inches (22x22cm) by spreading some butter and flour, for the blondies to be easily turn out after baked.

  2. In a large bowl, beat together the melted butter and both brown sugar and granulated sugar for about 5 min. 

  3. Beat in the egg and vanilla extract.

  4. Now, using a rubber spatula, mix in the flour, baking powder and salt, in a folding manner, from the outside in. 

  5. After it is all well mixed, stir in the m&m´s, pour the mixture in the baking pan and bake at 356°F (|80°C) for 20 to 25 minutes. 

  6. Once baked, and cooled, cut the blondies into 16 squares.
