This breadis addictive. My mom makes a cornbread, but a different type. My mom´s recipe calls for actual corn, you can feel the bits of corn when eating it and it´s a bit more savory.

This cornbread is the typicall american recipe, it´s fluffy, not too sweet nor too savory. It fits perfect as a dessert on itself, or as a side dish to eat with chicken or beef, pulled pork, etc.

  • 1 C all purpouse flour
  • 1 1/4 C cornmeal
  • 2/3 C sugar
  • 1 tsp salt
  • 3 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 C buttermilk
  • 1/4 C milk
  • 1 tbsp honey
  • 1/2 C butter
  • 3 tbsp vegetable oil
  1. Preheat the oven to 400°F (200°C) and grease a square or round cake pan and set aside.  

  2. In a big bowl, mix the all purpouse flour, cornmeal, sugar, salt, baking powder and baking soda. Make a holw in the middle of the flour and add the eggs, buttermilk, milk, honey, butter and oil. Stir with a spatula until there are only a few lumps remaining.

  3. Pour the mixture in the previously greased pan and bake at 400°F (200°C) for 20-25 minutes until the top starts to turn golden brown. Servir caliente con un poco de mantequilla encima.
