Healthy vegan brownies

When it comes to food, a lot of you already know that I´m not a huge fan of the so called “healthy” food simply because the term is not as well defined, and it is thron around so much that it is now hard to realize what “healthy food” really is. I feel there´s too much confusion about this topic.

Now, my sister is a nutricionist, and as with everything, the more you now the less you think you do, and the less you know the more you are willing to say you know a lot.

The thing is for most people nutrition (at least in mexico) is much more about aesthetics than it is about health.

And the thruth is that my sister, with all her knowledge, could easily say that some thing people consider “not healthy” are not really not, and viceversa. And at the end it all comes down to eating variety and in moderation, because everything in excess is potentially harmfull.

I am not vegan nor vegetarian, but every once in a while I like making vegan and vegetarian foods, because what I do think is that most of people´s diets are too meat oriented, and we could benefit from eating more non-animal food, new and different ingredients.

As a disclaimar I want to clarify that this should not be taken as medical advice, because I´m not a health professional, and any change in diet should be consulted with and monitored by a professional with acces to each person´s medical history.

What I can assure you si that these brownies are amazing, taste really good and have a great texture, so enjoy the recipe.

Healthy vegan brownies

Ingredients
  

  • 2 tbsp chia seeds
  • 6 tbsp water
  • 1/3 C vegan butter
  • 1 C coconut sugar
  • 1/2 tbsp vanilla extract
  • 1/2 C almond flour
  • 1/2 C cocoa powder
  • 1/2 tsp salt
  • 1/2 C vegan chocolate chips, or chunks

Instructions
 

  • In a small blow, place the chia seeds and water, and let it rest for 20 minutes, until the chia seeds absorb the water.  
  • Preheat the oven to 375°F (180°C). 
  • In a small bowl, sift together the almond flour, cocoa powder and salt, and set aside.  
  • In another bowl, beat the butter and sugar, either with a mixer or by hand using a whisk, until it turns fluffy and lightens in color. Beat in the vanilla. 
  • Add the chia seeds to the mixture, and fully incorporate using a rubber spatula. 
  • Now, add the dry ingredients to the mixture in three different additions, mixing after each addition using the rubber spatula. 
  • In a previously greased square baking pan about 9×9 inch (or a rectangular one of similar proportions) pour and spread the batter. 
    Llevar al horno por 20 a 25 min. aproximadamente. 
  • Bake at 375°F (180°C) for 20 to 25 min. 
  • After baking, let them cool down completely. Then cut into 2×2 inch (5×5 cm) squares aprox. and enjoy.
