Healthy banana ice cream sandwiches

Now these! These, I swear taste better than a lot of store-bought ice cream sandwiches, and well, they are way healthier. Now the word “healthy” is pretty vague, but truly this recipe is, it does not have any added sugars nor fats. So go ahead, try it on your own and it will sure become one of your favorite dessert options.

Healthy banana ice cream sandwiches

Servings 3

Ingredients
  

For the cookies:

  • 80 gr oats toasted and processed
  • almond or peanut butter (preferably homemade) needed amount
  • maple syrup to taste
  • 1 pinch salt

For the ice cream filling:

  • 2 bananas previously frozen

Instructions
 

For the cookies:

  • Mix all of the ingredients to get a dough, form a ball, cover with some plastic wrap and refrigerate for at least 20 minutes.
  • On a clean surface, with some parchment paper underneath roll out the dough to be about 0,2 inches (0,5 cm) thick.
  • Using a square cookie cutter or just a knife, cut out 6 squares of about 2 inches (5cm) and put them in the freezer for 15 minutes.

For the ice cream filling:

  • Process the frozen bananas in a food processor to make the ice cream, and put in the freezer for 30 minutes.

To assemble:

  • Place one cookie on a clean surface and then place a third of the banana ice cream on top, and spread a little, then put another cookie on top and press, then do the same thing with the rest of the cookies and icre cream.
  • Once assembled put in the freezer for at least 15 minutes. Then you can eat them!

Notes

To store them leave them in the freezer.
