Apple fritters

Apple fritters are something I stumbled upon when I was in my twenties already. Growing up in Mexico this is not something that is common, donuts are pretty common, but not apple fritters. I could not help falling in love with them after though.

Apple fritters are indulgent, and I like to eat them as a treat for myself and others on weekend breakfasts, I take the time and make them, and it feels great to do so. These fritters have an irregular shape to them, and that’s okay, they are still pretty, not perfect.

these fritters are normaly eaten with a sugar glaze, but I prefer to eat them just with some powdered sugar on top. But you can eat them with a mixture of granulated white sugar and cinnamon for example, which goes great with the apple.

These have to be made fried, I am sorry, but they do, they don’t taste the same otherwise and are not crispy enough, and let me tell you, the crispness is everything when it comes to apple fritters. Now, something important is to say that the fritters, as everything fried, taste much better when eaten that very same day. That’s how it is with fried things. They don’t taste the same the next day, because they turn soggy and are not as crisp.

As for the apples, I like using Granny smith apples (or green apples), this is beacuse they are harder and hold better when fried, but you could use almost any type of apple and they would work as well, you could even use a mixture of apples.

Apple fritters

Ingredients
  

  • 1 C all purpouse flour
  • 1/8 C brown sugar
  • 1/8 C granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 granny smith apples
  • 1 tbsp lemon juice
  • 2 eggs
  • 1 tsp vanilla
  • 2 tbsp butter, melted
  • 1/4 C milk
  • oil, for frying

Instructions
 

  • Peel the apples, and cut into about half inch pieces and place them in a small bowl, then toss in the lemon juice and set aside.
  • In another bowl, mix together all the dry ingredients, including the sugars and set aside.
  • In a different bowl, mix the eggs, vanilla and milk.
  • Pour the flour mixture into the eggs one, in three separate additions, by mixing in between using a rubber spatula.
  • Mix in the apples, and once the apples are covered in batter, stir in the melted butter
  • Pour about 3 cups of vegetable oil in a heavy pot. Place over medium high heat. The oil has to be heated to about 350°F. You can test if it is ready by dumping a tsp of batter into it, it has to turn gold pretty fast and sizzle. To make the fritters transfer the batter into the oil using a scoop or a spoon and cook until they turn golden brown.
  • Then place the fritters on a plate with layers of paper towels.

Notes

The darker you fry the apple fritters the crispier they will be.
