As you may or may not know, I currently work a 9 to 5 job, and I have found I really like cooking in advance, or “meal prep” as most may call it. I pour myself a glass of wine, and cook what I will eat for lunch during the week. I also like making breakfast if I feel like it.
So this recipe is a part of all of this, since I have been looking for a lot of recipes that can be made in advance. This is great side dish to meal prep, to eat along with some type of meat.
- 1 cauliflower in small chunks
- 1/2 zucchini in slices
- 2 potatos, medium sized in cubes
- 2 tzas pumpkin in cubes
- 100 gr bacon in cubes
- Olive oil needed amount
- Salt to taste
- Garlic powder to taste
- Black pepper to taste
- Dry oregano to taste
- Dry basil to taste
- Mozzarella cheese shredded
Preheat the oven to 392°F (200°C).
Place all of the vegetables on a baking sheet previously lined with parchment paper, then put the bacon on top, the spices and salt.
Lastly, spread the shredded cheese on top and bake for 20 minutes aprox. or until the cheese is completely melted and the vegetables are soft.
