Oat molasses banana apple muffins

Oat molasses muffins with banana and apple are just as good as it gets, healthy, with fruit they are fresh and wholesome.

As of lately we have been thinking of a loto f recipes to try out and then upload to our blog. We have a list of recipes we randomly come up withh, that then we try and if they come out as expected then upload and share here. And the thruth is that list is really long, there are always at least 5 recipes written there that are left to try. And it is really fun to think of ingredients and then of the different ways they could be cooked.

I must say some things turn our pretty great, and other not so much, and that´s when, we, sttubornly, make a récipe a loto f times until it comes out like we want it to and we love it, as if it were a challenge. My sister, who loves making bread, once made a bread récipe like seven times until she got it perfectly, and now when she does it, she makes it the same way everytime, and get it right.

Plus, we are now trying to make more Savory recipes, because there are so many we really like and want to share, but the thing is desserts and breads are our specialty, and we are okay with this, we have a special place for all things sweet in our hearts, because they take longer, it is more important to measure everything and because, mosto f the time, they are harder to make, which is exactly what motivates us.

This is one of those recipes we had a long time wanting to make, mainly because I had a tremendous craving for a muffins récipe that was perfect toe at while drinking a smoothie or milkshake, or maybe just milk and with some butter on top.

These muffins have it all, they are healthy because they do not have any butter or oil and bot a loto f sugar either. They have oatmeal, chia sedes and fruit. They are fluffy and moist.

We love using banana for a lot of recipes, it is sweet and its textura is just ideal to make not only muffins, but breads, pound cakes and cupcakes.

This récipe calls for applesauce. Now if you do not have access to premade applesauce anywhere near you, you can totally make it a home with our applesauce recipe, is it so easy to make and tastes just the same, or even better.

Oat molasses banana apple muffins

Servings 16 muffins

Ingredients
  

  • 1 1/2 C all purpouse flour
  • 1 1/4 C rolled oats
  • 1/2 C broen sugar or coconut sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 egg
  • 1 C milk
  • 1 tsp white vinegar
  • 1 ripe banana
  • 1/2 C applesauce
  • 1/4 C molasses
  • 1/2 C nuts chopped in small pieces optional
  • Chia seeds to decorate

Instructions
 

  • Preheat the oven to 375ºF (180ºC) and place cupcake liners on a cupcake mold.
  • Mix the vinegar and milk together and set aside.
  • In a big bowl, sift and mix together the flour, sugar, baking soda, salt, and cinnamon, and then add in the oats and stir using a spoon or fork.
  • In another bowl mash the banana and in the applesauce, egg, molasses and the milk mixture. Combine all these ingredients. Add the flour mixture to this one little by little mixing after each addition. Mix in the chopped nuts.
  • Pour the mixture into the cupcake mold filling each cupcake to 3/4 and sprinkle about 1/2 tsp of chia seeds on top of each muffin. Bake at 375ºF (180ºC) for 17 minutes.
