Raw vegan chocolate cookie bars

These raw vegan chocolate bars with cookie are just great, they are sweet, and so easy to make!

There is something really special about rawvegan desserts, because they are made of whole ingredients without cooking, plus they taste great… I personally think they are delicious because they feel really natural.

On the other hand, while making rawvegan desserts I feel somewhat limited when it comes to flavors, or at least I have a harder time coming up with ideas and combinations… it is most probably also because I am not a rawvegan nor vegan but, since I like trying out lots of things, I always try making different recipes.

The first rawvegan dessert I ever tried was a recipe I made from a Youtube video, you know how it goes, you watch lots of recipe videos you then never make… well that time I did, but I had almost none of the ingredients the recipe called for and it ended up being what I could make, it wasnñt as bad but I now know it can be way better. I haven´t tried many rawvegan desserts nor am I an expert on the subject but I can say I love that they are this good and also healthy.

Ever since I made that first attempt at a rawvegan dessert, which, by the way, it was also bars, that I realized if you want to be a good rawvegan you will need a good food processor, that´s it. Back then I did not have a good food processor and it was really hard using the blender for the raisins, almonds… now that I have a better one, everything´s easier. The food processor thing is important, at least for me, because if the ingredients aren´t grounded as they have to, you will have a bad time with this kind of desserts and if that happens you maybe won´t try making them again, also, we do not want to spoil your blender.

This recipe´s inspired in a recipe I saw of peanut caramel bars but i changed it, and of course if you don´t like one of the inrgedients you can use another one, but alwasy make sure you follow the quantities.

In case you had any questions, this recipe is suited for everyone: children, adults, etc. In spite of having a cookie like consistency, it is creamy and soft, so anyone can eat it. Whether you are a raw vegan or not, have a good food processor or not, this is the time to try new things and new desserts that may surprise you.

Ingredients
  

For the cookie:

  • 3/4 C (3.40 oz) (97 gr) coconut flour or sugarfree shredded coconut
  • 3/4 C (2.60 oz) (75 gr) rolled oats
  • 3/4 C (3.40 oz) (97 gr) almond flour
  • 1 C (5.30 oz) (150 gr) dates or raisins

For the chocolate:

  • 2 C (10.60 oz) (300 gr) dates or raisins
  • 1 tbsp (0.50 oz) (15 gr) almond butter
  • 2 tsp (0.33 fl oz) (10 ml) vanilla extract
  • 3 tbsp cocoa powder sugarfree
  • 1-4 C (2 fl oz) (60 ml) coconut water or water
  • Pecan nuts or cashews to decorate

Instructions
 

For the cookie:

  • Line a square shaped mold of about 8 inches (20 cm) with parchment paper to then place the bars and so they don´t stick.
  • Place all of the ingredients in a food processor and process until a "dough" forms.
  • Spread this dough in the mold using a spatula or using your hands until it is flattened. Put in the fridge for 15 minutes.

For the chocolate:

  • In the same food processor, process all the ingredients to make the chocolate until you get a thick and crea,y mixture.
  • Pour this mixture on top of the cookie, once the cookie is cool, and spread until it covers the whole cookie.
  • Place some pecan nuts or cashews on top of the chocolate to have something crispy. Put in the fridge for another 15 minutes and it´s ready!
