Banana caramel french toast

Banana caramel french toast is so yummy! French toast on its own is a brunch classic, at least for us. The best thing is you can do it either savory or sweet and eat it along with a lot of different toppings.

To make french toast you have to have a good base and that can only mean having a good bread. We actually use our brioche loaf bread and it is better when it is a day or two old since it hardens and it absorbs the egg mixture better.

So, we could say that french toast is breakfast or brunch and it is somewhat about using up ingredients you have around. It is the perfect way to use up bread that is going bad to make sure you don´t throw it away.

This time we bring you a french toast recipe that´s just delicious, with some roasted banana and dulce de leche. The banana ins´t actually roasted since we make it on a regular pan, bu they it sure tastes roasted. We make it with some brown sugar and butter to make it caramelize and it´s a total game changer, so easy and good.

This entire recipe only takes minutes to make. You can have breakfast ready in less than 30 minutes. As for the toppings you could choose whatever you want, or even try it on its own.

One great thing about french toast is without noticing it you are eating protein, carbs and fruit if you add some. The fact is you can make it as healthy as you want by just changing things up a little. You could even make it to be vegan.

French toast is one of those things that can´t be missing from a brunch. Either made at home or somewhere else, there should always be french toast in a brunch and vice versa. Now the recipe here calls for dulce de leche, but you can always use any type of caramel you like and it will be just as great.

Ingredients
  

For the french toast:

  • 4 slices loaf bread
  • 2 eggs
  • 3 tbsp (1.52 fl oz) (45 ml) milk
  • 1 tbsp (0.52 oz) (15 gr) brown sugar
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 1/4 tsp (0.06 oz) (1.7 gr) salt
  • 1 tbsp (0.52 oz) (15 gr) unsalted butter

For the roasted banana and garnish:

  • 3 banana medium size
  • 2 tbsp (1 oz) (30 gr) unsalted butter
  • 3 tbsp (1.58 oz) (45 gr) brown sugar
  • 1 pinch salt
  • Dulce de leche needed amount

Instructions
 

For the french toast:

  • Crack open the eggs in a small bowl along with the milk, brown sugar, vanilla and salt. Mix using a fork until it is all well combined.
  • Put half the butter on a pan over medium heat on the stove. Take two slices of bread and dip them in the egg mixture, then put them on the pan to cook for about 2-3 minutes each side until lighty golden brown.
  • Repeat this same step with the other two slices of bread and put aside until needed.

For the roasted banana and garnish:

  • Slice the banana. In the same pan over medium heat add the remaining butter and then the banana.
  • Quickly add in the sugar and salt on top of the banana slices and let them cook for 2 minutes until lighty golden and caramelized.
  • Serve the french toast with a dulce de leche layer and the roasted banana on top. ¡Ready!
