Brownie cheesecake

Eating some of this brownie cheesecake is paradise. Is there a better combination that cheesecake with brownie?… While we are still figuring it out we bring you here this recipe that shows that these two things are always great, together or separate, they are that good.

Brownie cheesecake is not a brownie but a cake or pie if you will, with a brownie base and cheesecake on top. Our famous cheesecake filling. Of course you can make it to be either round or square shaped but it is always best to put the brownie as the base since it is heavier than the cheesecake filling and it will hold it all together.

La receta de cheesecake de éste pastel es muy básica simplemente porque tampoco se necesita mucho una vez que la acompañamos de un buen brownie suave, esponjoso, húmedo y chocolatoso. Se puede decorar como prefieras pero a nosotras nos encanta con dulce de leche y más chocolate porque -¿why not?-.

Si tengo que elegir entre brownie o cheesecake creo que voy por el primero simplemente porque no me puedo resistir a un buen brownie que se deshaga en la boca. Que sea crujiente por fuera y muy muy suave por dentro, como nuestros brownies clásicos.

Nuestra receta de cheesecake brownie es la básica y ya tu puedes ponerle algún otro ingrediente que te guste y que no altere mucho la consistencia de las mezclas.

Ingredients
  

For the brownie base:

  • 1 C (7.95 oz) (225 gr) unsalted butter
  • 1 1/3 C (8.10 oz) (230 gr) semisweet chocolate chips
  • 1 1/2 C (10.60 oz) (300 gr) granulated white sugar
  • 1/2 C (3.5 oz) (100 gr) brown sugar
  • 4 eggs
  • 2 tsp (0.34 fl oz) (10 ml) vanilla extract
  • 1 1/4 C (5.7 oz) (162 gr) flour (pastry type flour)
  • 3/4 C (2.20 oz) (63 gr) cocoa powder , sugarfree
  • 1/2 tsp (0.13 oz) (3.5 gr) salt

For the cheesecake:

  • (17.60 oz) (500 gr) cream cheese , at room temeprature
  • 2/3 C (4.70 oz) (133 gr) granulated white sugar
  • 3 eggs
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 1/4 tsp (0.6 oz) (1.7 gr) salt

Instructions
 

For the brownie base:

  • Preheat the oven to 375º F (180º C). Line a round cake pan or mold of about 9 inches (23 cm) in diameter with parchment paper. In a bowl sift together the flour, cocoa powder and salt.
  • Put the butter and chocolaye in a heat resistant bowl and melt in the microwave for 30 secs reps, meaning you heat it for 30 seconds and tale it out after this time passes to mix using a fork. Repeat this until the chocolate is completely melted. Let it cool down for 5 minutes.
  • Add in the two sugars, eggs and vanilla extract to the chocolate mixture and beat using a whisk until it all integrates.
  • Add in the flour and cocoa mixture and beat until you get a smooth batter. Pour this mixture in the cake pan and set aside.

For the cheesecake:

  • In a bowl, place the cream cheese and sugar and beat with a whisk or an electric mixer for 2 minutes until the mixture is soft and fluffy.
  • Beat in the eggs, vanilla and salt and keep on beating for 1 more minute until you get a soft and smooth batter.
  • Pour this carefully on top of the brownie mixture (while still uncooked) and bake it all together for 40 minutes until it turns slightly golden brown and a little firm.
  • To prevent the cheesecake from breaking apart on the top, turn off the oven and open the door but let the cheesecake in there to cool down for 10 to 15 minutes. Then, take it out of the oven and let it cool down completely at room temperature.
  • Refrigerate overnight preferably, then decorate as you wish and serve.
