These healthy nut bars are great for breakfast or as an afternoon snack. They are atually really similar to our pecan pie, but wuth less ingredients and better for our health.

Apart from the nuts, these bars call for coconut and almonds, which give both nutritional richness and also lots of flavor and texture. They are made in the oven because they call for eggs, which is why they have a good consistency. But you could actually not bake them if you prefer to, just make sure to skip the eggs then.

Homemade bars are always a good choice. They are great to take to school or work, becasue they are just a grab and go kind of snack. They are easy and healthy at the same time.

The nuts used for this recipe are, preferably, pecan nuts, though you can use castile nuts, almonds or hazelnuts if you prefer it. The important thing is to have an ingredient that gives them crunchiness, texture and lots of flavor.

Dates are an important part of this recipe. They work as a natural sweetener while also providing an amazing creamy texture. The truth is dates are very present when making healthy desserts, specially if they are vegan or raw vegan desserts because they have a neutral sweet flavor that we all enjoy and they give this unmatched consistency.

Ingredients
  

For the base:

  • 3/4 C (3.42 oz) (97 gr) coconut flour , sugarfree
  • 3/4 C (3.42 oz) (97 gr) almond meal
  • 2 tbsp (1 fl oz) (30 ml) honey or agave syrup
  • 1 egg
  • 2 tbsp (1 fl oz) (30 ml) coconut oil
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • Pinch salt

For the filling:

  • 10 dates , soaked in water for 2 hours
  • 1 tbsp (0.52 oz) (15 gr) unsalted butter
  • 2 tbsp (1.05 oz) (30 gr) coconut sugar
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • Pinch salt
  • 2 1/2 tbsp (1.25 fl oz) (37 ml) almond milk
  • 1 1/2 C pecan nuts or castile nuts , in chunks

Instructions
 

For the base:

  • Preheat the oven to 375º F (180º C). Line the base of a square cake pan of 7.87 inches (20 cm) with parchment paper, this is to put the bars on it so they don't stick.
  • Put all the ingredients in a food processor and process until a sand-like dough forms.
  • Spread this cookie dough mixture in the pan with a rubber spatula or using your hands until even. Bake for 15 minutes.
  • Once the base is ready, take it out of the oven and let it cool down for 5 minutes.

For the filling:

  • Put the dates in a food processor or a blender and blend until you get a soft and smooth mixture.
  • Put a pot on the stove over medium heat. Put the date mixture in it along with the butter, coconut sugar, vanilla and salt and cook for 3 to 4 minutes until the mixture starts to boil a little.
  • Add in the nuts and almond milk and mix well using a rubber spatula. Cook for 3 minutes until it is all well combined.
  • Pour this mixture on the base and spread it until it cover the whole surface. Bake it all together for 25 minutes more until it is slightly golden brown and firm.
  • Once ready, take out of the oven and let it cool down for 10 minutes. Cut this into 9 same size squares to get the bars.
