Easy chicken ramen

This easy chicken ramen recipe is everything. Ramen is a japanese dish, that consists of a broth with chinese egg noodles. To this you add different ingredients, to make for different types of ramen.

I really like almost all types of asian food (or at least what I have tried up until now). I really like indian, thai, japanese and chinese food. They all have a few things in common, they all use spices, chile, and a lot of vegetables, I guess that’s why I like them, because, since I’m mexican I like those things. They all have amazing dishes. If you also like asian food, like we do, you have to go see our sushi rolls recipe, or chinese style fried rice and our butter chicken. You will love them.

Ramen is a fun dish, because you can add the inrgedients you want or use others instead, depending on what you like. Also, there are different types of broths, that are made in diffrent ways.

This recipe, is the easy version of a chicken ramen, to quickly make it at home. This, is better, because the ingredients to make an authentic and original ramen are quite hard to find in most places.

Now, in a chicken ramen, we usually use chicken, noodles, a hard or soft boiled egg, srping onion, some type og vegetables (it can vary), and some type of mushrooms (this depends a lot on the flavor you want to get). I, personally, really like using broccoli, but you could easily replace it and use some mushrooms or other vegetables you like instead.

Once you make this easy chicken ramen recipe, you will want to make it over and over again. It is filling, wholesome, easy to make and really good for how little time it takes to make it.

Ingredients
  

For the broth:

  • 34 lq oz (1 lt) chicken broth, bought or homemade
  • 1 piece fresh ginger, small sized
  • 3 spring onions
  • 2 cloves garlic
  • 1/4 C (2 lq oz) (60 ml) soy sauce
  • 3 tbsp (1.50 fl oz) (45 ml) sesame oil

For the chicken:

  • 2 chicken breasts, skinless and boneless
  • 1 egg,
  • 3 tbsp (1.50 fl oz) (45 ml) milk
  • 1 C (4.60 oz) (130 gr) all purpouse flour
  • 1 C (3.40 oz) (110 gr) bread crumbs
  • 1 tbsp paprika
  • Salt to taste
  • 1/2 tbsp dry oregano
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • Vegetable oil, for cooking

For the other toppings:

  • 1 broccoli , a whole head
  • 7 oz (200 gr) chinese egg nooodles
  • 2 eggs , soft or hard boiled (however you prefer them)
  • 2 spring onions
  • Chili flakes (optional)

Instructions
 

For the broth:

  • Place a pot on the stove and pour in the chicken broth. Let it simmer with a lid on for 5 minutes.
  • Peel and cut the ginger, spring onion and garlic into small dices and add into the broth. Add in the soy sauce and the sesame oil, and put the lid on to let it heat up for another 5 minutes.

For the chicken:

  • Place a big pan on the stove over medium high heat with some oil and preheat the oven to 375º F (180º C).
  • In a small bowl, beat together the egg and milk using a fork. Place the flour and the bread crumbs in different plates.
  • Distribute all the spices used for the chicken betweem the flour and bread crumbs, adding half to the flour and the other half to the bread crumbs.
  • Cut each chicken breast in half to end up with 4 pieces of chicken. Cover each piece with the flour mixture, then coat it in the egg and milk mixture to finish by coating it with the bread crumbs. Do this with all the chicken pieces and cook them on the pan for 3 minutes each side.
  • Place the chicken pieces on a baking sheet lined with parchment paper and bake at 375º F (180º C) for 10 minutes.

For the other toppings:

  • While the chicken cooks and the broth simmers, put some water in a different pot and bring to a boil. Cut the broccoli into small pieces.
  • Once the water is boiling add in the egg noodles and cook following the package instructions (it is almost always 4 minutes). Drain the noodles without throwing out the water, and it that same water cook the broccoli pieces until soft, for about 3 minutes.
  • Peel and cut in half both boiled eggs and cut the spring onion into small pieces.

To serve:

  • Serve some broth into 4 different serving bowls, and place 1/4 of the noodles in each one. Then add 1/4 of the broccoli and half of and egg into every bowl.
  • When the chicken is reay, cut each piece into "strings" and place them in the serving bowls. Sprinkle the spring onion pieces on top of the noodles and you're done!. You can add some chili flakes on top if you want to.
