Homemade granola

Homemade granola is great. It is one of those things that seem difficult to make, because of how good and cute it is, but in reality it is easy and quick to make. Plus, the fun thing is to change the ingredients up a bit to keep it interesting.

Now, for me, there are two types of granola. There is chunky granola and there is crisp golden brown granola without the chunks. Now, depending on what I feel like eating at a given moment, I prefer the former or the latter.

Chunky granolas (as I call them) go great with some yogurt or other things, while the other type feel rustic and really crisp.

Si, we have our own recipe, but you can get creative, so here we give you the tips and tricks to be able to personalize your own granola.

  • For the base: The usual thing is to use rolled oats. But I like using more things for the base, so it has different and interesting textures, like quinoa, chia seeds or flax seeds.
  • To bring it all together: Granola has to have some type of fat to make it cook, turn golden brown and “granolify” it, and some type of sweetener to make it stick together. For the fat, I like using coconut oil, because it tastes great, but you can use any kind of vegetable oil you like, even olive oil to make it a bit savory. As for the sweetener, you can use honey, maple syrup, corn syrup or even molasses for a different flavor.
  • Extra ingredients: To give it an extra touch and personalize your granola, you can add some other ingredients, like dried coconut, raisins, pumpkin seeds, dry cranberries, chocolate chips, dried mango, or pistachos). Now, if you are adding dried fruit, make sure to add it after baking.

Ingredients
  • 4 C (12.30 oz) (350 gr) rolled oats
  • 1/2 C dry coconut
  • 1/2 C pumpkin seeds
  • 1/4 C pecan nuts , chopped
  • 1/8 C (0.70 oz) (20 gr) chia seeds
  • 1/2 C (4 fl oz) (120 ml) maple syrup or honey
  • 1 tbsp (0.50 fl oz) (15 ml) molasses
  • 1 pinch salt
  • 1 pinch cinnamon ground
  • 1/4 C dried cranberries or raisins
Instructions
  1. Preheat the oven to 280º F (140º C). In a big bowl combine the rolled oats, dry coconut, pumpkin seeds, nuts and chia seeds.

  2. Place a small pot over medium heat on the stove and mix in there the coconut oil with the maple syrup (or honey) and molasses. Cook for 2 to 3 minutes until it is all melted and integrated. You can also do this in the microwave.

  3. Add in the oil mixture and add a pinch of salt and a pinch of cinnamon and mix using a spoon until all the dry ingredients are coated.

  4. Pour the granola mixture over a big baking sheet with parchment paper underneath and bake for 45 minutes until the granola is lightly golden brown. It is important to check on it and stir every 20 minutes while baking so it doesn't burn.

  5. Once the granola is ready, let it cool down and mix in the dried cranberries. Mis it all well and store in a container with a lid.
