This baked oats has recently become really famous. If TikTok wasn’t our salvation during quarantine, I don’t know what was. Among so many things that this social network has given us, for me the best have been the recipes, especially those that have gone viral, like this one.

During this time there were also two groups of people: those who took the time to exercise and eat better to stay in shape and those who took the opportunity to eat a little more of everything and rest.

Well, the baked oatmeal came out of TikTok, specifically from group one, so it is a very healthy, quick and easy recipe to make, for my point of view ideal for breakfast. It is one of the easiest recipes, because everything is put in a blender, then baked and it’s ready!

Oatmeal has so many uses in the kitchen that it seemed impossible to do something different with it, but it surprised us when baked, as if it were an oatmeal mug cake.

The best thing about this recipe is that you can add a lot of ingredients or toppings, if you will, depending on the flavor you want to make, such as chocolate, fruits, nuts, etc.

Give me oatmeal in any presentation and I’ll be happy. In fact, it’s my breakfast every morning; oatmeal soaked in water or vegetable milk with apple, honey and nuts. I seem to unwittingly be one of the group of people who try to take care of themselves to be fitter.

Ingredients
  

  • 1 C (3 oz) (87 gr) rolled oats
  • 1/4 C (2 fl oz) (60 ml) whole milk (or vegetable milk)
  • 2 eggs, medium size
  • 2 bananas, better if ripe
  • 2 tbsp (1 fl oz) (30 ml) honey or agave syrup
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 3/4 tsp (0.13 oz) (3.7 gr) baking powder
  • 1 pinch salt
  • 1 tbsp (0.25 oz) (7 gr) unsweetened cocoa powder (if you want it to be chocolate flavored)
  • 2 tbsp semisweet chocolate chips (optional)

Instructions
 

  • Preheat the oven to 375º F (190º C). Put some butter on two small oven-safe cake pans, or ramekins.
  • Place all the ingredients (but the chocolate chips) in a blender or food processor and process or blend for 45 seconds until you get a soft and smooth batter.
  • Pour the batter in the two pans and add half of the chocolate chips on top of each one.
  • Bake for 20 to 25 minutes until they slightly turn golden brown and when a wooden stick comes out almost clean when inserted. Take them out of the oven and eat along with fruit, peanut butter or some more chocolate.
