Gluten-free brownies are possible. As many other desserts are too. When it comes to desserts I find it really easy to substitute ingredients and use some others instead. Whether you are trying to turn a recipe into a vegan version of it, or a gluten-free version, (or perhaps a lactose-free version, or if you are allergic to something specific) it is pretty easy most of the time. We will show you how.
In this case, we are making gluten-free brownies. And this has come about because a lot of you (via instagram) have aksed us if we have any gluten-free recipes we could share with you. Now, we have to say, none of us is intolerant to gluten, nor have coeliac disease (nor do we pretend to be experts at it). But we are aware a lot of people are. So, since you trust us and like our recipes, we want to start making recipes that make the life of some of you a little bit easier. We come up with the recipes, make sure they turn out great everytime, and you make sure to take care of yourself, and try the recipe of course!
We are so excited actually, to learn a lot more about different types of diets. And continue to learn as we go. We promise to make more gluten-free, vegan, or lactose-free recipes. Or let you know about little secrets and tips of what ingredients to use instead of the ones you don’t or can’t use.
We actually have some older recipes that are gluten-free. We, however want to revisit them and imrpove them (as we do with most recipes that get really old) to see if they work or if there’s even a tiny detail we could improve. It is pretty insane how much we care about you getting it right at home using our recipes. For some reason, it is so rewarding to hear you guys and read what you share with us, about you liking our recipes, and about how your mother in law now loves your cakes, or your children get so happy when you make them a specific recipe. Oh the joy, seriously.
Now, as you can see here in the pictures, these brownies are awesome! The texture they have is simply it! In this case, for this recipe, we use a gluten-free flour. We actually used Bob’s red mill’s one (not sponsored). They have several products that are great for a lot of different diets or regimens. This is the brand we have available to us, you can use whichever brand you find that is for a gluten-free flour.
And here comes the good part. You can even make your own gluten free flour using a combination of some other types that are naturally gluten free. We have yet to make a blog post here showing you how it’s done (we have to do some more research and try it ourselves). But you could make a mixture of garbanzo bean flour, potato starch and tapioca flour, or cornstarch even (or just use simply one of these “flours”). We are dying to know if you already have your own homemade gluten-free flour.

2/3C (3.50 oz) (100 gr)gluten-free flour (bob's red mill* for example)
1/4tsp (0.04 oz) (1.2 gr)salt
1/2C (3 oz) (85 gr)chocolate chips, dark chocolate or semisweet chocolate

Method
Preheat the oven to 356º F (180° C). Grease with butter and line a square cake pan of about 8.66 inches (22 cm) wide with parchment paper. Also, in a small bowl, sift the flour with the salt.
Melt the chocolate with the butter, which can be done in two ways. The first is in a double boiler, placing a medium saucepan with plenty of water over medium heat. Then, add both ingredients to a large heat-resistant bowl and place it on top of the pot with water (without touching the water) so that they melt with the steam.The second is in the microwave, adding both ingredients to a medium microwave-safe bowl and then melting them for 30-second intervals, i.e., put the bowl in the microwave for 30 seconds and take it out after this time to mix a little with a spoon. Repeat the process until the chocolate is completely melted.
To the same bowl with the chocolate, add the cocoa powder, the soluble coffee and the oil. Mix with a rubber spatula so that all the ingredients are perfectly integrated. Let this mixture sit until completely cooled.
In a large bowl, add the eggs with the two types of sugar and the vanilla extract and beat with an electric mixer or a hand whisk for 2-3 minutes until it turns lighter in color, and gets fluffier and lighter.
Carefully add the melted chocolate mixture (which should no longer be hot) to the bowl with the egg mixture and beat for 30 seconds more.
Finally, add in the flour mixture along with the chocolate chips and incorporate with the rubber spatula until you get a smooth batter.
Pour the mixture into the pan and spread it with the same rubber spatula to even it out. Bake the brownies at 356º F (180° C) for approximately 25-30 minutes until they are firm around the edges but when a toothpick or knife is inserted in the middle, it still comes out with a little brownie batter on it.
Once the brownies are ready, take out of the oven, let them rest for 20 minutes inside the pan and then turn them out and place them on a rack to cool completely before cutting. When cool, cut into 12 equal portions.
We created this blog as a way to save all the recipes we make at home. We started making mostly desserts a long time ago as a hobbie. It soon turned into something else.
