Peel the apples, and cut into about half inch pieces and place them in a small bowl, then toss in the lemon juice and set aside.
In another bowl, mix together all the dry ingredients, including the sugars and set aside.
In a different bowl, mix the eggs, vanilla and milk.
Pour the flour mixture into the eggs one, in three separate additions, by mixing in between using a rubber spatula.
Mix in the apples, and once the apples are covered in batter, stir in the melted butter
Pour about 3 cups of vegetable oil in a heavy pot. Place over medium high heat. The oil has to be heated to about 350°F. You can test if it is ready by dumping a tsp of batter into it, it has to turn gold pretty fast and sizzle. To make the fritters transfer the batter into the oil using a scoop or a spoon and cook until they turn golden brown.
Then place the fritters on a plate with layers of paper towels.

The darker you fry the apple fritters the crispier they will be.
