Preheat the oven to 280º F (140º C). In a big bowl combine the rolled oats, dry coconut, pumpkin seeds, nuts and chia seeds.
Place a small pot over medium heat on the stove and mix in there the coconut oil with the maple syrup (or honey) and molasses. Cook for 2 to 3 minutes until it is all melted and integrated. You can also do this in the microwave.
Add in the oil mixture and add a pinch of salt and a pinch of cinnamon and mix using a spoon until all the dry ingredients are coated.
Pour the granola mixture over a big baking sheet with parchment paper underneath and bake for 45 minutes until the granola is lightly golden brown. It is important to check on it and stir every 20 minutes while baking so it doesn't burn.
Once the granola is ready, let it cool down and mix in the dried cranberries. Mis it all well and store in a container with a lid.
