Line a rectangular baking sheet of about 15.8 x 11 inches (40 x 28 cm) with parchment paper.
In a big bowl, using a whisk cream together the butter, confectioners sugar (the 3/4 C)and vanilla for 2 minutes until the mixture turns lighter in color and fluffy.
Integrate the flour salt and nuts (prebviously sifted) little by little using a rubber spatula until you get a soft dough (careful not to overmix).
Cover the dough with kitchen plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 375º F (180º C). Once you take the dough out of the refrigerator form small balls using your hands and place the, on the baking sheet. You will get about 30 balls.
Bake at 375º F (180º C) for 15 minutes or until they are slighty golden brown.
To decorate, place the rest of the confectioners sugar in a medium bowl, and when the cookies come out of the oven, roll them on the sugar until completely covered.
