Mix all of the ingredients to get a dough, form a ball, cover with some plastic wrap and refrigerate for at least 20 minutes.
On a clean surface, with some parchment paper underneath roll out the dough to be about 0,2 inches (0,5 cm) thick.
Using a square cookie cutter or just a knife, cut out 6 squares of about 2 inches (5cm) and put them in the freezer for 15 minutes.
Process the frozen bananas in a food processor to make the ice cream, and put in the freezer for 30 minutes.
Place one cookie on a clean surface and then place a third of the banana ice cream on top, and spread a little, then put another cookie on top and press, then do the same thing with the rest of the cookies and icre cream.
Once assembled put in the freezer for at least 15 minutes. Then you can eat them!
