Preheat the oven to 375ºF (180ºC) and place cupcake liners on a cupcake mold.
Mix the vinegar and milk together and set aside.
In a big bowl, sift and mix together the flour, sugar, baking soda, salt, and cinnamon, and then add in the oats and stir using a spoon or fork.
In another bowl mash the banana and in the applesauce, egg, molasses and the milk mixture. Combine all these ingredients. Add the flour mixture to this one little by little mixing after each addition. Mix in the chopped nuts.
Pour the mixture into the cupcake mold filling each cupcake to 3/4 and sprinkle about 1/2 tsp of chia seeds on top of each muffin. Bake at 375ºF (180ºC) for 17 minutes.
