Mini pecan pies

These mini pecan pies are perfect when craving something sweet. The filling has a sort of caramel made with corn syrup and sugar. Small, just like they are, they are ideal for any type of celebration or event where there are lots of people.

Nuts are always yummy, either on their own or in sweet or savory dishes. These mini pecan pies are one of those things where nuts are the star of the show and they go great with the sweetness and softness of the crust.

Pecan pies, any size, in Mexico are usually made with pecans which have a somewhat different flavor and texture compared to walnuts, which are more common in Spain, for example. I like pecans better because that is just what I am used to, but these mini pecan pies can be made with either of them or even combining both types of nuts, or maybe using almonds, hazelnuts or pistachios, even though the original american recipe calls for pecans, just like in our pecan pie.

You can either buy or make the dough to make the crust for these mini pies from scratch. However, it is always better to make it at home and that is why we give you here the recipe to make it. The rest is super easy because you just have to mix the ingredients and pour them in the cups as a filling.

Mini pecan tarts recipe

These mini pecan pies are small, but probably not enough to be eaten in one go. Either way, they are perfect for a dessert table for example. This makes them more interesting and cute but you will need a special pan to make them that is the roght size. You can use a mini cupcake pan, which is what we use, and you will be just fine.

Ingredients
For the crust:
  • 1 1/4 C (5.70 oz) (162 gr) all purpouse flour
  • 3 tbsp (1.60 oz) (45 gr) granulated white sugar
  • 1/2 tsp (0.12 oz) (3.5 gr) salt
  • 1/3 C + 1 tbsp (3.18 oz) (90 gr) unsalted butter cold and in cubes
  • 2 tbsp (1 oz) (30 gr) cream cheese cold and in cubes
  • 2 tbsp (1 fl oz) (30 ml) water , cold
For the pecan filling:
  • 2 eggs small
  • 3 tbsp (1.60 oz) (45 gr) unsalted butter melted
  • 1/3 C + 1 tbsp (4.23 oz) (120 gr) corn syrup
  • 1/3 C + 1 tbsp (2.64 oz) (75 gr) granulated white sugar
  • 1/4 C (1.76 oz) (50 gr) brown sugar
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 1 tsp (0.28 oz) (8 gr) all purpouse flour
  • 1/2 tsp (0.12 oz) (3.5 gr) salt
  • 1 C pecan nuts or walnuts in small pieces
