Banoffee pie

The banoffee pie is, in every sense, a classic dessert. It is one of those that most of us know, because it is so famous. It is a layered cake, which has banana, cream, dulce de leche, and a crunchy cookie base.

The combination of these layers make a dessert that is delicious! the dulce de leche is sweet and creamy, while the whipped cream is neutral in flavor and very smooth, the banana is a little sweet and adds a lot of flavor, and the cookie base is crunchy, and all this combines very well!

On the top we put a little bit of grated semi bitter chocolate, just for decoration, and we put so little that you really don’t notice it when you eat a slice of cake.

Now, it is a cake that you have to eat pretty fast, like any dessert that takes fresh, because they do not last long in optimal state, and something important, you have to keep it in the fridge or refrigerator once it is ready. The banoffee pie is a “cold” pie, that is to say, the filling is not cooked. The only thing that is cooked in the oven is the cookie base, and the rest is simply layered and then refrigerated and it’s ready! This is why it is a very easy and quick recipe to make.

Ingredients
  

For the crust:

  • 1 1/2 C (165 gr) vanilla crackers (Maria* or Graham* type)
  • 1/2 C (112 gr) unsalted butter, melted
  • 2 tbsp (30 gr) brown sugar
  • 1 pinch salt

For the filling:

  • 1 1/2 C dulce de leche, thick (pastry type dulce de leche)
  • 3 bananas, big, sliced
  • 1 1/2 C (360 ml) whipping cream, really cold
  • 2 tbsp (30 gr) white sugar
  • 1 tsp (5 ml) vanilla extract
  • 1/2 C semisweet or dark chocolate (to decorate)

Instructions
 

For the crust:

  • Preheat the oven to 180° C. Lightly butter a round cake pan of approximately 23 cm in diameter.
  • Place all ingredients in a blender or food processor and blend for 30 seconds until a sandy dough is formed.
  • Place this dough in the mold and arrange it very well all over the base and sides, trying to press with your hands or with a glass so that there are no loose lumps.
  • Bake the base of the pie for 8-10 minutes until lightly browned. Once ready, remove from the oven and let it cool completely.

For the filling:

  • Place the whipping cream in a large bowl with the sugar, vanilla extract and beat with an electric mixer for 3-4 minutes until stiff peaks form.
  • Separately, add the dulce de leche to the base of the pie and spread very well and evenly.
  • Place the banana slices on top until they cover all the dulce de leche. Finally, add the whipped cream and spread over the entire surface.
  • To decorate, add grated chocolate on top and that's it. Refrigerate the pie for at least 1 hour before cutting.
