To make this mascarpone stuffed french toast, you can use the typical loaf of white bread, but the truth is that it is much better if you use some sort of milk bread, or even a brioche bread loaf, which is what we used this time. This is because the brioche bread gives much more softness to this, and a fluffy texture that the traditional loaf of bread does not usually have.

The idea of this is a French toast, with a mascarpone cheese filling or stuffing, which has a neutral flavor, which is, to some extent, a little savory actually, which combines very well with the rest of ingredients. At the end, everything is topped with a berries sauce or topping, that is sweet yet acid and sour, and with some fresh fruit. Our recommendation is to use some fresh raspberries, or strawberries, because they give a fresh and slightly acid touch that contrasts very well with the flavor of the bread and cheese!

Ingredients
  

For the french toast:

  • 12 slices or white bread, milk bread or brioche bread, about 0.80 inches (2 cm) thick
  • 9 tbsp mascarpone cheese
  • 6 eggs, big
  • 1/4 C (1.80 oz) (50 gr) white sugar, or your favorite sweetener
  • 2 tsp (0.34 fl oz) (10 ml) vanilla extract
  • 1 tsp cinnamon powder
  • 1 C (8.11 fl oz) (240 ml) whole milk, or your favorite type
  • 1 C (4.80 fl oz) (140 ml) whipping cream
  • 3 tbsp (1.60 oz) (45 gr) unsalted butter, for cooking the french toast

For the berry topping:

  • 7.80 oz (220 gr) berries, fresh or frozen
  • 1/4 C (1.80 oz) (50 gr) white sugar or your favorite sweetener
  • Pinch of salt
  • 2 tsp (0.34 fl oz) (10 ml) lemon or lime juice
  • 1 C fresh berries, of your choice, for decorating

Instructions
 

For the berries topping:

  • Place the berries with the sugar and a pinch of salt in a medium cooking pan and bring to medium heat. Cook, stirring occasionally, for 5 minutes until the berries break down a bit.
  • Add the lemon juice, stir and cook for 2 more minutes until the consistency of a light sauce forms. Remove the sauce from the heat and wait for it to cool down a little before using.
  • Wash and disinfect the fresh berries or fruit of your choice very well. Depending on the berries used, cut the strawberries into 4 pieces and leave the rest of the berries uncut, such as raspberries, blueberries or blackberries. Set aside until needed.

For the French toast:

  • Take 6 slices of bread and spread 1 1/2 tablespoons mascarpone cheese on each slice, without reaching the edges. Top each slice with another slice of bread to make 6 sandwiches.
  • Separately, in a large bowl beat the eggs with the sugar, vanilla extract, cinnamon powder, milk and whipping cream. Beat everything with a hand whisk until smooth.
  • Place a large pan over medium heat and add 1 tablespoon of butter to cook the French bread. Dip 2 sandwiches into the egg mixture, turning them over to make sure that they soak up the mixture. Then immediately place them on the pan to cook for 3 minutes on each side, until lightly browned.
  • Repeat the previous step to cook the rest of the French toast. Once they are all ready, cut them in half and serve with the berries topping and fresh berries or fruit.
