These baked lemon poppy seed donuts are the softest ever! They are crazy fluffy and have that crispy touch because of the poppy seeds. They are incredibly yummy!

One thing we love about this recipe, is that the lemon, by itself, and being acidic, works in combination with the baking powder and baking soda, to make these donuts wonderfully fluffy and really soft. They are truly something when it comes to fluffiness, they are as airy as can be!

And by the way, lemon and poppy seeds together are always a good idea. They go together. As simple as that. These combination of flavor is as good as apple & cinnamon, or strawberry & crem, for example. Trust me. It works for just about anything. That’s why there are so many recipes that use this combination, because it’s so delicious!

Plus, these donuts are baked, meaning you don’t have to fry anything. And if you would rather not eat fried things, then this is your recipe! To clarify, Classic doughnuts are fried. But when we talk about baked donuts, we mean the ones that are made in the oven and using a donut shaped mold or pan. We know a lot of people who prefer baked donuts instead of a classic fried doughnut. We, we love both to be honest.

For this recipe, we recommend using a silicone mold that is donut shaped. This is because baked donuts are usually very soft, especially these in particular, and can easily fall apart when turning them out (specially if they are still hot when you do it). This is why it is necessary to use a silicone mold, in my opinion, so everything’s easier and they come eout looking great! aLthough, fof course, you can use whichever pan or mold works best for you.

Finally, we glaze each donut with a simple lemon glaze, and some more poppy seeds to decorate. We really enjoy using poppy seeds for a lot of desserts. Truthfully, they work great, since they remain crunchy, even when baked. And that is the fun part!

Method
- Preheat the oven to 356º F (180° C). Grease or spray a 12 donut shaped mold or pan with some oil or butter. The size of the donuts should be about 3.50 inches (9 cm) in diameter.
- In a medium bowl, sift the flour with the baking powder, baking soda and salt. Mix with a spoon and set aside until needed.
- Separately, in a large bowl add the sugar with the lemon zest and rub them together using your fingertips. This will help bring out the oils from the lemon zest, adding more flavor.
- Add the egg, melted butter, sour cream or yogurt, lemon juice and vanilla extract. Beat with a hand whisk for 1 minute until smooth.
- Add the flour mixture in two separate additions, beating after each one using a rubber spatula until there are no flour lumps left. Finally, add in the poppy seeds and beat just until incorporated.
- Once the batter is ready, pour it in a piping or plastic bag without a piping tip. Cut open the tip of the bag and carefully fill each donut cavity with the batter, filling each one to 2/3 of its capacity. You should get about 8 donuts in total.
- Bake the donuts at 356º F (180° C) for approximately 10-12 minutes or until they are lightly browned and a wooden toothpick comes out clean when inserted.
- Once ready, remove the donuts from the oven and let them cool for 10 minutes while you make the glaze.
- Mix the powdered sugar with the lemon juice in a medium bowl using a fork for a few seconds until a slightly thick glaze forms.
- To glaze the donuts, you can hold them downwards and dip them, or you can glase them using a spoon. Once they are glazed, sprinkle some more poppy seeds on top.
- When they are ready, let them sit for 10 minutes for the glaze to become firmer and the donuts are easier to eat.
