Valentine’s day is coming up and we all are looking for recipes and specially desserts to make this season. Whether for hosting a friends get together, a “friendsgiving” or if youn have someone special you want to impress. If you want a quick yet beautiful and original dessert this is your recipe.

This dessert is called cupid’s cloud because it resembles a cloud. Plus, the pink color it has perfectly fits the valentine’s day theme and whole idea.
It is a creamy dessert made with whipping cream, vanilla and berries. The good thing is you can actually use either fresh or frozen berries. What we do recommend is that you use fresh berries (the ones you like most) for decorating on top.

The best way to serve this is in small dessert glasses. It makes the whole thing look so polished.
We do have to say that this is not the best dessert if you need to transport this dessert somewhere else. As it is best to keep it in the fridge at all times once it’s done and ready.
As for the types of berries to use. Just like I said, use the ones you like the most for the cream. I like using a frozen mix that (the typicall they sell in almost every supermarket) with raspberries, strawberries, cranberries and blackberries. Just make sure to use a mix you like.

Method
- In a blender or food processor, add the frozen raspberries or strawberries with the sugar and salt. Blend for about 20 seconds until you get a non-liquid blend.
- Separately, in a large bowl add the whipping cream with the vanilla extract and beat with an electric mixer or hand whisk for 3 minutes until stiff peaks form.
- Add the blend to the whipped cream and mix with folding motions using a rubber spatula until everything is fully integrated and a smooth, airy and cloud-like mixture is formed.
- Pour this mixture into 6 dessert glasses or cups and garnish with raspberries or strawberries. Eat immediately or refrigerate until ready to eat and that's it!
