- Crush all the cookies until you get a sandy texture. You can do this using a food processor, with your hands, directly in a bowl, or by placing the cookies in a Ziploc bag and crushing them with a rolling pin.
- In a bowl, mix the crushed cookies with the cream cheese and knead with your hands or a spoon until you get a slightly sticky dough. Form 8 balls of the same size and place them on a large plate. Then, put them in the freezer for 30 minutes.
- Separately, place the Lotus Biscoff spread in a microwave-safe bowl and heat it for 30 seconds, or a little longer if necessary, until it melts completely.
- Once the balls have firmed up after freezing, take one with a fork and dip it into the melted Lotus cream until it is completely covered. Then immediately place it on a plate lined with wax paper to prevent sticking, and sprinkle the Lotus cookie crumbs on top.
- Repeat the same process with the rest of the balls until they are all covered and decorated. Return them to the freezer for 1 hour to harden completely. After this time, the bites will be ready to enjoy.
