Method
- Place the mini chocolate Easter eggs in a ziploc bag, reserving some to decorate the parfait. With a rolling pin, crush the easter eggs inside the plastic bag until they are in medium sized pieces with some other larger pieces.
- The brownies should be completely cool before using them for this recipe. Then cut them into small pieces until you have about 32 pieces.
- In a large bowl, add the whipping cream and vanilla extract. Then sift the powdered sugar and cocoa powder on top, in the same bowl. Beat with an electric mixer or hand whisk for about 3 minutes until stiff peaks form.
- To make the parfaits, you need small glasses. Inside each glass, spoon a layer of the chocolate whipped cream, then add 3 or 4 pieces of brownie and on top pieces of the mini chocolate Easter eggs. Do a whole second layer of all these ingredients and then decorate with regular whipped cream and the whole chocolate easter eggs.
- Repeat this to make the rest of the parfaits.
