Method
- Place some parchment baking paper in a rectangular tray of approximately 13 x 9 inches (33cm x 22cm).
- Add the yogurt with the honey and vanilla extract in a bowl and beat with a fork until smooth.
- Pour the yogurt into the pan and spread with a spoon until the entire surface is covered. The layer of yogurt should be quite thin, for the yogurt to freeze quickly and for the barks to be easier to eat.
- Top the yogurt with the strawberries, blueberries and granola. Cover the tray with some plastic wrap and place in the freezer for at least 3 hours until firm.
- Once the yogurt is ready, remove it from the freezer and carefully cut it into 12 irregular pieces.
