Method
For the cookies:
- Mix all of the ingredients to get a dough, form a ball, cover with some plastic wrap and refrigerate for at least 20 minutes.
- On a clean surface, with some parchment paper underneath roll out the dough to be about 0,2 inches (0,5 cm) thick.
- Using a square cookie cutter or just a knife, cut out 6 squares of about 2 inches (5cm) and put them in the freezer for 15 minutes.
For the ice cream filling:
- Process the frozen bananas in a food processor to make the ice cream, and put in the freezer for 30 minutes.
To assemble:
- Place one cookie on a clean surface and then place a third of the banana ice cream on top, and spread a little, then put another cookie on top and press, then do the same thing with the rest of the cookies and icre cream.
- Once assembled put in the freezer for at least 15 minutes. Then you can eat them!
Notes
To store them leave them in the freezer.
