- Line a rectangular baking sheet of about 15.8 x 11 inches (40 x 28 cm) with parchment paper.
- In a big bowl, using a whisk cream together the butter, confectioners sugar (the 3/4 C)and vanilla for 2 minutes until the mixture turns lighter in color and fluffy.
- Integrate the flour salt and nuts (prebviously sifted) little by little using a rubber spatula until you get a soft dough (careful not to overmix).
- Cover the dough with kitchen plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 375º F (180º C). Once you take the dough out of the refrigerator form small balls using your hands and place the, on the baking sheet. You will get about 30 balls.
- Bake at 375º F (180º C) for 15 minutes or until they are slighty golden brown.
- To decorate, place the rest of the confectioners sugar in a medium bowl, and when the cookies come out of the oven, roll them on the sugar until completely covered.
