Method
- Place the sugar in a medium heavy-bottomed saucepan and heat over medium-low heat until fully melted, about 8 to 12 minutes. Do not stir at any point; allow it to melt on its own while keeping a close eye to prevent burning. At first, some lumps may form, but they will gradually dissolve.
- Once the sugar has completely melted, immediately remove the saucepan from the heat and add the butter, mixing with a heat-resistant spatula or spoon. The mixture will bubble vigorously, which is normal.
- Add the heavy cream along with the vanilla extract and salt. Mix until you obtain a smooth and homogeneous caramel. Taste and adjust with a little more salt if desired.
- Pour the caramel sauce into a glass jar and let it cool for at least 10 minutes before using. Ready!
