If there is a dessert you have to try, a must, it is definitely this bananas foster. A bananas foster is a dessert made from caramelized bananas with a butter, sugar and rum sauce. Then the usual thing is to serve it with some canilla ice cream.

And let me tell you. This is probably one of the best desserts you will ever try! no joke. There is something about the simple taste of banana that we all love and know, that is taken to a next level with this recipe.

The bananas, in combination with the butter, sugar, cinnamon, vanilla, nutmeg, and rum is just amazing. Now, about the rum, the idea is for it to completely cook and in fact you can actually ignite it for the alcohol to evaporize (this is the usual way to do this really). So, there won’t be any alcohol by the time you eat it, and only the taste and sweetness of the rum will remain. So, you will get all of the flavor goodness of the rum without the alcohol.

This is a really easy dessert to make actually, and it comes together quickly. It is one of those things that once you learn how to make, you will want to make all the time. Truly, it is pretty much addictive.

The only bad side about this recipe is the fact that you willl have to eat it straight away, right after you make it. But don’t worry, we are sure you will want to finish it and eat it up right there and there. It is that decadent.

Make sure to use a good quality canilla flavored ice cream that you like. That way, the result is even better, if possible, that is.

Ingredients
  

  • 3 bananas
  • 1/4 C (1.98 oz) (56 gr) unsalted butter
  • 2/3 C (4.70 oz) (133 gr) brown sugar
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 pinch ground nutmeg
  • 3 tbsp (1.50 fl oz) (45 ml) dark rum
  • 1/4 C (1 oz) (30 gr) nuts, pecan or castile (optional)
  • Vanilla ice cream, for serving

Method
 

  1. Peel the plantains and then cut them in half both lengthwise and crosswise to obtain 4 pieces of each piece of plantain.
  2. In a large skillet over medium-high heat, melt the butter with the brown sugar, vanilla extract, cinnamon and nutmeg, stirring and stirring constantly with a spatula until the mixture becomes a grainy liquid and begins to bubble, about 3 minutes.
  3. Add the bananas, cut side down, and continue cooking, continuing to stir with the same spatula, until the liquid begins to resemble a softer caramel, for another 2-3 minutes.
  4. Add the rum (not straight from the bottle), then tilt the pan to ignite the alcohol with a gas burner or carefully light with a match. Cook, shaking the pan but not putting the spatula in, until the flames have gone out and the caramel has thickened to a honey consistency, about 2 minutes. If the flames do not go out on their own, cover the pan and carefully remove it from the heat. Alternatively, you can add the rum and not light it on the fire, but instead boil until the rum has mostly cooked off and the caramel has reached a honey consistency.
  5. Remove the pan from the heat and if desired, add the chopped walnuts and stir to combine with the other ingredients. Once the bananas foster is ready, it should be served immediately with vanilla ice cream.
