Strawberry cream cheese pound cake

This strawberry cream cheese pound cake couldn’t be more delicious! The flavor combination of cream cheese and strawberries reminds us a lot of the typical strawberries and cream combo that we all know and love. This is an easy to make recipe that is simply delicious. It is a soft, fluffy and very moist pound cake. The strawberries give it a slightly acid, yet sweet touch that contrasts really well with the cream cheese.

Also, as you can see in the picture, the pound cake itself has slices of strawberries in the mixture. So at the end, when we bite into it, we come across these pieces of strawberry. And we love that. If you notice, when we bake any sort of cake or pound cake with fruit in the batter, like here with the strawberries, the fruit usually sort of explodes and stains the cake around it. And we absolutely love that.

Plus, as you know, we are not big fans of decorating desserts too much. We like the idea of simple and quick desserts. We like desserts to be beautiful, but in a natural way and all by themselves. Besides we think and defend that it is not necessary to use too many colorings, fondant, or this type of much more elaborate decorations. Our thing is to make desserts that taste amazing, and with a very natural final look.

So, to decorate this pound cake, we make a simple cream cheese frosting and garnish with more fresh sliced strawberries on top. The combination of this with the pound cake is unbeatable!

Hoewver, as it happens with most desserts that call for fruits, this pound cake doesn’t last very long. This is because we do not use any kind of preservatives. Plus, using fruit in a dessert, like here, means the dessert won’t last long, and will go bad quickly. So, we recommend that you finish it as soon as possible, which should not be a problem.

Ingredients
  

For the pound cake:

  • 1 1/4 C (9.90 oz) (281 gr) unsalted butter, at room temperature
  • 1 C (7.90 oz) (225 gr) cream cheese, at room temperature
  • 2 1/2 C (17.60 oz) (500 gr) white sugar
  • 1 tbsp (0.50 fl oz) (15 ml) vanilla extract
  • 6 eggs
  • 1/2 tsp (0.088 oz) (2.5 gr) baking powder
  • 1/2 tsp (0.088 oz) (2.5 gr) salt
  • 1 1/2 C (8.40 oz) (240 gr) strawberries, fresh and rinsed

For the glaze:

  • 1/2 C (3.95 oz) (112 gr) cream cheese, at room temperature
  • 2 tbsp confectioners sugar (powdered sugar)
  • 1 tbsp (0.50 fl oz) (15 ml) milk
  • Strawberries, fresh, sliced, for decorating

Instructions
 

  • Preheat the oven to 329º F (165° C). Grease with some butter a bundt cake pan of about 9.80 inches (25 cm) in diameter.
  • In a medium bowl, sift the flour with the baking powder and salt. Mix with a spoon integrate. Separately, place the strawberries on a chopping board and with a knife remove the stems and cut them into thin slices.
  • Place the butter and cream cheese in a large bowl and beat with a hand whisk or electric mixer for 2-3 minutes. Add in the sugar and beat for 2 more minutes until the mixture lightens in color and turns fluffy.
  • Add in the vanilla extract and then the eggs one at a time, beating after each addition. Beat for 1 more minute until creamy.
  • Add the flour mixture in two separate additions, beating after each addition to get a smooth mixture. Finally, add the sliced strawberries and beat just until incorporated.
  • Pour the batter into the bundt cake pan and even it out with a rubber spatula. Bake at 329º F (165° C) for about 80-90 minutes until a wooden stick comes out clean when inserted.
  • Once the pound cake is ready, take it out of the oven and let it sit for 20 minutes in the same pan and then turn ir out and place it on a cooling rack to cool down completely.

For the glaze:

  • In a medium bowl add the cream cheese with the powdered sugar and beat with a fork for 1 minute until the mixture is smooth. Add in the milk and beat for a few more seconds until the glaze is light and smooth.
  • Carefully add the glaze on top of the pound cake using a spoon to spread it. Garnish with sliced strawberries.
