Funfetti cake

Funfetti cake or sprinkles cake is so special for birthdays. Now, I have to say that today it is not my birthday nor my sister´s birthday but it it someone´s birthday somewherenin the world and making this cake to celebrate is just such a great idea.

Either way, you can make this cake for any other celebration too, and it is just great too. I have actually made it to celebrate my not-birthday, a random day that I feel like eating a birthday cake-like cake. You know, one of those days you just feel like treating yourself.

This is actually a classic vanilla cake, but with a twist, with the colorful sprinkles. We really like to just decorate it with a white frosting, it both looks and tastes great.

The more colorful the sprinkles the prettier the cake will be. It is really important not to overmix once you have added the sprinkles to the cake, otherwise the color of the sprinkles will somewhat fade away and you won´t be able to notice them once you bake the cake.

I don´t know about you but I love vanilla cakes, simply because you can combine it with lots of different flavors and ingredients. In this recipe it is combined with sprinkles. For the filling you can actually use the same frosting or you could use some dulce de leche or jam.

To make this cake special and to make it clear it is a celebration we like to decorate it as you see in the pictures. If you want to decorate it like this, you need some more sprinkles (the ones you like) to put on top and to make the small balloon decoration you just need two wooden sticks, some thread and small colorful balloons. Blow up the balloons, and knot them together using a piece of the thread, then knot this to the wooden sticks. Use some colorful paper to decorate. Finally, stick the wooden sticks into the cake.

Ingredients
For the cake:
  • 1/2 C (3.95 oz) (112 gr) unsalted butter at room temperature
  • 1/4 C (2 fl oz) (60 ml) vegetable oil soft flavored
  • 1 C (7 oz) (200 gr) granulated white sugar
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 2 eggs big
  • 1 1/3 C (6.10 oz) (173 gr) wheat flour for baking (cake type)
  • 2 tbsp (0.56 oz) (16 gr) corn starch
  • 1/4 tsp (0.06 oz) (1.7 gr) salt
  • 1 tsp (0.24 oz) (7 gr) baking powder
  • 1/4 tsp (0.06 oz) (1.7 gr) baking soda
  • 3/4 C (6 fl oz) (180 ml) buttermilk
  • 1/3 C (1.65 oz) (47 gr) sprinkles colorful
For the frosting:
  • 1 1/2 C (11.88 oz) (337 gr) unsalted butter at room temperature
  • 3 C (13.05 oz) (370 gr) confectioners sugar
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 2 tbsp (1 fl oz) (30 ml) milk
  • 1/2 tsp (0.12 oz) (3.5 gr) salt
  • 1/2 C (2.46 oz) (70 gr) sprinkles colorful
Instructions
For the cake:
  1. Preheat the oven to 375º F (180º C). Line two round cake pansof about 9 inches (23 cm) in diameter with parchment paper.

  2. In a bowl, sift together the flour along with the corn starch, salt, baking powder and baking soda.

  3. In a big bowl, using an electric mixer, cream together the butter, oil and sugar for 3 minutes until you get a foft, fluffy and lighter in color mixture.

  4. Mix in the vanilla extract. Add in the eggs one by one, beating for 30 seconds after each addition.

  5. Add in the flour miture in three separate additions, alternating with the buttermilk, beating after each addition. Stir in the sprinkles and mix for 30 seconds until you get a soft smooth batter.

  6. Divide the batter n two by pouring it into the two cake pans and bake for 25 to 30 minutes until a wooden stick comes out clean when inserted.

  7. Once ready, let the cakes rest for 10 minutes, turn them out and put them on a cooling rack to let them cool down completely.

For the frosting and assembly:
  1. Put the butter and confectioners sugar in a big bowl, abd use a hand whisk or an electric mixer to beat until the mixture lightens in color and turns fluffy.

  2. Add in the vanilla, milk and salt for 2 minutes until you get a soft frosting.

  3. Place one of the cakes on the plate you will present the cake. Add 1/3 of the frosting on top and spread evenly just on the top.

  4. Put the other cake on top and decorate the whole cake covering it with the frosting and some srpinkles on top. Refrigerate for at least 2 hours before serving.
