Donuts, when baked like this, and made in this way, have a cake-like texture. This is the way donuts are actually made in Spain all the time. They usually don’t know or don’t make the traditional american doughnut recipe. The result is a spongy, soft, velvety donut that is also moist, and of course, with an intense chocolate flavor that you will fall in love with.

The glaze on top is not too sweet, which is great, because it goes amazingly with the donuts themselves, and the sprinkles on top give them a crunchy extra touch that tastes and looks great when combined in this.

Ingredients
  

For the donuts:

  • 2 C all purpouse flour
  • 1/2 C cocoa powder, unsweetened
  • 1 tsp baking powder
  • 1/2 tsp bicarbonato de sodio
  • 1/2 tsp sal
  • 2 eggs
  • 1/2 C white sugar
  • 1/3 C brown sugar
  • 1/3 C unsalted butter, melted
  • 2 tsp vanilla extract
  • 3/4 C whole milk
  • 1/4 C sour cream, or unsweetened greek yogurt
  • 1/2 C semisweet chocolate chips (optional)

For the glaze and decoration:

  • 1/2 C semisweet chocolate chips (optional)
  • 2 tbsp whipping cream
  • 2 tbsp unsalted butter
  • Heart shaped sprinkles, for decorating

Instructions
 

For donuts:

  • Preheat the oven to 180° C. Grease with a little butter or oil spray a mold for 12 donuts or two molds for 6 donuts, with cavities of approximately 9 cm in diameter.
  • In a medium bowl, sift the flour with the cocoa powder, baking powder, baking soda and salt. Mix with a spoon and set aside until needed.
  • Separately, in a large bowl add the eggs with the two types of sugar, melted butter, vanilla extract, milk and sour cream (or Greek yogurt). Beat with a balloon whisk for 1 minute until smooth and homogeneous.
  • Add the flour mixture in two additions, beating after each addition with a rubber spatula. If desired, add the chocolate chips and beat very lightly, just until the ingredients are integrated and there are no flour lumps.
  • Once the mixture is ready, with the help of the same spatula, place it in a piping bag or ziploc bag without a dough stick. With scissors or a knife cut the tip of the pastry bag or ziploc bag and carefully pour the mixture into each cavity of the donut mold, filling each one to 2/3 of its capacity. With these amounts you should get 10-12 donuts in total.
  • Bake the donuts at 180° C for approximately 12 minutes or until they are lightly browned and a wooden toothpick comes out clean.
  • Once ready, remove the donuts from the oven and let them cool for 10 minutes while the glaze is being made.

For the glaze:

  • Melt the chocolate chips with the whipping cream and butter, which can be done in two ways. The first is in a double boiler, placing a medium saucepan with plenty of water over medium heat. Then, add all the ingredients to a large heat-resistant bowl and place it on top of the pot with water (without touching the water) so that they melt with the steam.
    The second is in the microwave, adding all the ingredients to a medium microwave-safe bowl and then melting them for 30-second intervals, i.e., put the bowl in the microwave for 30 seconds and take it out after this time to mix a little with a fork. Repeat the process until the chocolate is completely melted.
  • To glaze the donuts, they can be put directly into the glaze bowl or they can be spooned on top. Immediately after glazing a donut, place it on a plate and decorate it with heart sprinkles.
  • When all the donuts are ready, let them rest for 10 minutes so that the glaze becomes firmer and easier to eat.
