In addition, this banana bread recipe is designed to be very easy and quick to make. Because you only need 1 tablespoon of most of the ingredients, so it’s very easy to remember. Make sure to save it or bookmark it, so you don’t forget it, and you can have it at hand whenever you need it

Since the idea is to make a simple and quick banana bread, the recipe is for a plain banana bread. But, if you want to, you can add chocolate chips, or pieces of pecan nuts. Or, if you want, you could even add some raisins or any other type of candied fruit or nuts. In that case, you should add them right before baking the banana bread (at the same time you would add the optional chocolate chips the recipe calls for here).

It is necessary to bear in mind that for all these type of desserts that are made using ripe bananas, are best when the bananas used are very ripe. That’s because this is when bananas are the sweetest. Perfect for any dessert similar to a banana bread.

To add another layer of simplicity to this recipe, here’s another trick. And that is, you can make this entire recipe using your hands, literally. That is, instead of using a hand whisk to mash the banana, to whisk and to mix the flour at the end, you can skip all that and do it all using your hands. I mean, mash the banana, whisk and mix it all with your hands, plain and simple. Our mom always does this when she makes any kind of banana bread.

Plus, doing that makes it so much faster. Plus, it’s a lot of fun really! So if you’ve never tried it, this is the perfect recipe to do it.

  • 1 banana, very ripe
  • 1 egg
  • 1 tbsp (0.53 oz) (15 gr) white sugar
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 1 tbsp (0.50 fl oz) (15 ml) vegetable oil, soft flavored
  • 1 tbsp (0.15 fl oz) (15 ml) milk
  • 1/4 C (1.15 oz) (32 gr) flour
  • 1/4 tsp (0.05 oz) (1.2 gr) baking soda
  • 1 pinch salt
  • 2 tbsp chocolate chips, semisweet (optional)

Instructions

  • Preheat the oven to 356º F (180° C) Linke a ramekin or round small cake pan of about 3.90 inches (10 cm) with parchment paper. You can also just grease it with butter and cover it with some flour.
  • Peel the banana, place it in a medium bowl and mash it with a fork until it is mashed. Add the egg, sugar, vanilla extract and beat well with the same fork so that everything is integrated.
  • Add the vegetable oil along with the milk, flour, baking soda and salt. If desired, chocolate chips can be added here. Beat again until you get a smooth and slightly lumpy mixture.
  • Pour the mixture into the ramekin and bake at 356º F (180º C) for 25 to 30 minutes until a wooden toothpick comes out clean when inserted and the top of the banana bread is golden brown.
  • Once ready, take the banana bread out of the oven and let it cool down in the same ramekin before turning it out. Let it completely cool down before eating.
