As promised we are bringing this recipe for you. Chili nachos or nachos with chili, whatever you want to call it, the point is it has tortilla chips (nachos), chile and cheese… which is oh so delicious even to hear. The goos thing is that´s exactly what I will be eating today and tomorrow so you have to first make our chile recipe and then use that to make these please.
The truth is, nachos as we know them are very different from this, but we are totally willing to try everything, but strange animals. However, we can say we have eaten some really good nachos outside of Mexico, to each their own but they are actually quite good.
In case you were wondering, this is no doubt the best way to eat chili, we are telling you, and probably a lot of people think so too. It is not that nachos on their own are magnificent but with this chili recipe we make, it just takes them to a different level.
Nachos are great as a snack, to hang out with friends, watching a football game, celebrating a birthday or simply to treat yourself at home. We have to clarify that we do not intend to motivate you to eat unbalanced. We in fact think it is important to mantain a healthy balanced lifestyle… exercise, eating well, sleeping well, meditate, staying active, and spending some time alone, among other things. Which is not to say either that you should have a restrictive diet, but more so, take care of yourself and be aware of what we do while enjoying food.
That is our mother´s number 1 rule, it is all about quantities, always, as long as the food you are eating is somewhat healthy. This is how it has been our whole life and that´s what she taught us, eating healhty yes, but being aware that once in a while it is good to have something less “healthy” per se in small quantities. It is also true that each person does they feels good and we should all respect that.
We think this is not truly a “recipe”, because it is simple tortilla chips, cheese and chili, but the important thing here is making a good chili (here you have our recipe for homemade beef chili), which we usually make a lot and freeze some for when we feel like eating it.

- 1 1/2 C beef chili
- 3/4 C milk
- 5 slices cheddar cheese
In a small microwave safe bowl put the cheese and milk and microwave it for 5 minutes so it melts and a sauce forms. In the middle of this take it out and mix using a spoon, then put it back in for the remaining 2 and a half minutes.
Put the tortilla chips on a big plate with walls. Pour the hot chili on top and then the cheese sauce.
If you so desire to you can add lime juice, salsa or guacamloe. ¡Ready!
