You keep them in the freezer and simply take one out and eat it when you feel like it. A truly delicious snack we know you will all absolutely love.

Now, in this recipe we make 8 bites, meaning 8 balls, of about 1.20 inches or 1.60 inches (3 cm or 4 cm) each in diameter. However, you can make them smaller and make 16 small bites por example. Feel free to change the bites’ size.

In the sense that these bites are cold when you eat them. That’s exactly what makes them perfect for this season.

Ingredients
  

  • 1 package (186 gr) lotus biscoff cookies
  • 2/3 C (150 gr) cream cheese, at room temperature
  • (120 gr) lotus biscoff cookie butter
  • Lotus biscoff cookies, in small pieces, for decorating

Method
 

  1. Crush all the cookies until you get a sandy texture. You can do this using a food processor, with your hands, directly in a bowl, or by placing the cookies in a Ziploc bag and crushing them with a rolling pin.
  2. In a bowl, mix the crushed cookies with the cream cheese and knead with your hands or a spoon until you get a slightly sticky dough. Form 8 balls of the same size and place them on a large plate. Then, put them in the freezer for 30 minutes.
  3. Separately, place the Lotus Biscoff spread in a microwave-safe bowl and heat it for 30 seconds, or a little longer if necessary, until it melts completely.
  4. Once the balls have firmed up after freezing, take one with a fork and dip it into the melted Lotus cream until it is completely covered. Then immediately place it on a plate lined with wax paper to prevent sticking, and sprinkle the Lotus cookie crumbs on top.
  5. Repeat the same process with the rest of the balls until they are all covered and decorated. Return them to the freezer for 1 hour to harden completely. After this time, the bites will be ready to enjoy.
