Giant pancake

There are days when you don’t feel like making ten small pancakes… you want just one—big, thick, and something that actually feels like a real breakfast (or dessert). This giant skillet pancake is exactly that: practical, impressive, and with a texture that makes you want to go back for more without thinking twice.

The idea is simple, but it works perfectly. You make one batch of batter and cook it all at once, almost like a quick, no-fuss cake. The result is a tall pancake, golden on the outside and soft on the inside, that holds its shape really well when sliced. It doesn’t fall apart or stay raw in the center if you control the heat properly—instead, it’s fluffy but with enough structure to serve in slices, almost like a mini cake.

The flavor is designed to balance whatever you add on top. It’s not overly sweet, which is key. It has that neutral base with a subtle hint of vanilla, making it perfect for richer toppings. And that’s where the magic happens.

How to make a Giant pancake

On top, we add a layer of homemade caramel sauce that completely transforms it. It slowly seeps into the warm surface of the pancake, adding that deep, toasty flavor. Then come the nuts, bringing texture and a crunchy contrast that makes every bite more interesting. It’s one of those combinations that seems simple but works so well.

The best Giant pancake

Visually, it’s just as good: that golden pancake, with caramel dripping down the sides and nuts scattered on top… it honestly looks amazing. And when you cut into it, you can see that soft, airy crumb that’s still sturdy enough to soak up everything you add.

It’s perfect for sharing, especially if you bring it straight from the skillet to the table and let everyone grab a slice. Although, to be honest, if you’re really hungry (or just craving it), it’s not that crazy to finish it all by yourself. It has that dangerous balance of “it’s not that sweet, so I’ll just keep going.”

Giant pancake

In the end, it’s one of those recipes that doesn’t complicate things but still feels special. One well-made pancake, good toppings, and you’ve got something that could easily be the highlight of your day.

Ingredients

  • 1 1/4 C (5.50 oz) (156 gr) all purpouse flour
  • 2 1/4 tsp (0.39 oz) (11.2 gr) baking powder
  • 1/4 tsp (0.04 oz) (1.2 gr) salt
  • 1 egg, medium size
  • 2 tbsp (0.92 oz) (26 gr) white sugar
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 3/4 C (6.09 fl oz) (180 ml) whole milk
  • 2 tbsp (1.06 oz) (30 gr) unsalted butter, melted
  • Caramel sauce
  • Strawberries in small pieces, for decorating

Method

  1. In a medium bowl, sift together the flour, baking powder, and salt. Mix with a spoon and set aside until needed.
  2. In a separate large bowl, combine the egg, sugar, vanilla extract, milk, and melted butter. Whisk with a hand whisk for about 1 minute, until the mixture becomes lighter and slightly fluffy.
  3. Add the flour mixture in two additions, whisking for about 10 seconds after each addition, until you get a smooth, lump-free batter.
  4. Place a medium skillet over medium heat and add a little butter. Once hot, pour in all of the pancake batter. Cook for about 3 minutes, until many bubbles begin to form on the surface. Then cover the skillet and cook for 2 more minutes. Uncover, carefully flip the pancake, and cover again. Cook for another 3 minutes, keeping in mind that this side cooks faster.
  5. Once the pancake is ready, remove it from the skillet and serve immediately with caramel sauce and strawberries.
