Banana bread oatmeal is literally our go-to lifesaver recipe at home, mainly for one very specific reason: those overripe bananas sitting in the fridge “waiting for their moment.” You know, the black bananas that no one wants to look at anymore… but that somehow turn into gold in this recipe, haha.

I’m pretty particular when it comes to bananas. I like them at a very specific stage—not green, but not overly ripe either. I enjoy them for maybe two perfect days, and that’s it. After that, I usually end up using them in smoothies or in something where their flavor isn’t too noticeable… until we discovered this oatmeal.

In this recipe, the banana is intentionally very ripe. It gets mashed and cooked right along with the oats, and that’s what changes everything. It doesn’t taste “too ripe” at all. Instead, it turns sweet, soft, and develops a flavor that tastes so much like banana bread. In fact, we call it “banana bread oatmeal” because that’s exactly what it tastes like—just in warm, spoonable form.

It’s incredibly easy to make: oats cooked with milk, honey, cinnamon, vanilla, and the banana mixed in from the very beginning. It doesn’t require a long list of ingredients, but the result is one of those breakfasts that feels both comforting and deeply satisfying. It turns out creamy, thick, and very filling—perfect for starting the day with something that actually keeps you full.

I’m a huge oatmeal fan. I love having it for breakfast, especially when it’s cold outside and it’s served warm—it’s basically the ultimate morning comfort food. Over time, this banana version became my favorite because it checks every box for me: warm, simple, and genuinely satisfying without feeling heavy.

One of the best things about it is how versatile it is. You can enjoy it warm right after making it or eat it cold straight from the fridge (although cold it becomes thicker, almost like pudding). I usually make a batch for several days, and each morning I just heat up a portion in the microwave and add my toppings.

In the end, we top it with whatever we have on hand: chocolate chips, fresh fruit, nuts… whatever we’re craving that day. That’s part of what makes it feel a little different every time.

How to make Banana bread oatmeal

It’s one of those breakfasts that can easily double as a dessert or afternoon snack because, even though it’s wholesome, it doesn’t taste boring or like one of those “healthy but bland” recipes. It has that naturally sweet banana flavor combined with cinnamon and vanilla that makes it incredibly cozy and comforting.

And yes, it’s our favorite way to use up those forgotten bananas that might otherwise end up in the trash.

Ingredients
  

  • 2 bananas, ripe, mashed with a fork
  • 1 1/2 C (12,17 fl oz) (360 ml) water
  • 2 C (16,23 fl oz) (480 ml) your milk of choice
  • 2 tbsp (1 fl oz) (30 ml) honey, or maple syrup
  • 1 tsp (0.17 fl oz) (5 ml) vanilla extract
  • 1 tsp cinnamon powder
  • 1 pinch salt

Method
 

  1. In a medium saucepan, combine the oats with the banana, water, and milk. Mix using a hand whisk or a silicone spatula, making sure all the ingredients are well incorporated before turning on the heat.
  2. Cook over medium heat for 10–12 minutes, stirring constantly to prevent the mixture from sticking to the bottom of the pan. As it cooks, the oats will begin to soften and thicken slightly, developing a creamy texture. Adjust the consistency by adding a bit more water or milk if you prefer it thinner.
  3. Add the honey or maple syrup, vanilla extract, cinnamon, and salt. Mix well to incorporate all the flavors and continue cooking for 3 more minutes, just until the texture becomes smooth and uniform.
  4. Remove from the heat and let it rest for a few minutes so the oats can thicken slightly and reach a creamier consistency. Serve warm and top with fruit of your choice.
